Ostrich leg, in my opinion, has the ideal thickness for a watch strap, the average thickness being at about 0.9mm, which is just the right thickness for the bar and lug clearance, without having to thin the leather.
Also, as it is a fairly sturdy and strong leather, it is far stronger than lizard, which has a more paper-like feel. The part I use is with the smaller scales which tends to be more supple and more comfortable.
Please remember that during the assembly, I will sand the necessary layers down until the correct thickness is achieved. During this process, I decide which densitiy Shell I will use because the denser hides are thinner and stronger; it's all about the combination of each layer and the resulting feel, flex, density, strength...
Inside, I will add a very thin layer of kangaroo (.2-.5mm) to serve as the core and add strength.
Before I start with the Ostrich, we should consider the desired thickness and also the taper, if you wish to have the strap taper down to be slightly thinner at the tip.
